2 cups southwestern style soup with 3/4 cup cooked rice
1 really good apple
Frozen green beans (I wish it was August and they were fresh).

Not the most exciting thing I have eaten in my life, however today it worked…mostly because I was super hungry.

Todays meal has a twist on the stir fry I did on Dec. 27th.
Ingredients:
1/2 of a sweet potato
1 cup cubed butternut squash
1 cup mixed vegetables
1/4 block firm tofu
1/4 yellow onion
1 pear

Leftovers: yukon gold potatoes (roasted in olive oil, with parsley salt and pepper, with some vegetable stock) and a bowl of vegetarian chili from Dec. 27th! MMMMM good.

If you boil the sweet potato and butternut squash, it makes it quicker to fry up with the rest of the ingredients and you tend not to over cook the veggies.
As the sweet potato and squash are boiling, I saute the onions in some olive oil, then add the sweet potatoes and squash, as well as the rest of the veggies.
After a few minutes, I add the tofu and the soy sauce. Once its all cooked, I add the vegan mozzarella cheese and off to the plate!

The pear was cut up and the left over potatoes are placed on the plate and I was certainly ready to eat.
I had a bit of chili left over so I had a small bowl with my dinner! It was wonderful.
