Jan 23, 2010 – Hearty Chili Mac

This very filling dinner was very easy to make, and tasted awesome.

You will need:
8 oz macaroni noodles
1/2 cup water
1 onion, chopped
3 garlic cloves
1 small red or green bell pepper, seeded and diced
1 8oz vegetarian ground beef chopped
1 26oz crushed tomatoes
1 15oz can kidney beans, undrained
2 tbsp chili powder
1 tsp ground cumin

Cook the macaroni according to package directions
Heat the water, and ad the onions and garlic. Cook until onions are soft, about 5 minutes.

Add bell pepers and vegetarian ground beef. Mix in the tomatoes, beans, and their liquid.
Add the corn, and its liquid, chili and cumin.
Simmer over medium heat stirring occasionally, for about 20 minutes.

Super easy, very tasty, and filling!
I added a sliced up pear to complete the meal.

Dec 28, 2009 – Vegetarian Chili

Tonight I had vegetarian chili. It was made with sauteed onions, kidney beans, butter beans, black beans and red kidney beans. A can of whole diced tomatoes, tomato puree and tomato juice. Chili powder, cumin and salt and pepper. After a few hours of simmering, it was ready to eat! My wife hit this one out of the park.
