Left overs can be very good. Today I had some left over Chili and some freshly cooked rice. I also had a delicious red pear and some frozen veggies.

The rice in the chili is a technique I got while living in Hawaii. In Hawaii, back in the late 1970’s and 1980’s I attended several high school and college football games. One way they served their chili was over a bed of rice. I loved it then, and still love it that way today.

Jan 23, 2010 – Hearty Chili Mac

This very filling dinner was very easy to make, and tasted awesome.

You will need:
8 oz macaroni noodles
1/2 cup water
1 onion, chopped
3 garlic cloves
1 small red or green bell pepper, seeded and diced
1 8oz vegetarian ground beef chopped
1 26oz crushed tomatoes
1 15oz can kidney beans, undrained
2 tbsp chili powder
1 tsp ground cumin

Cook the macaroni according to package directions
Heat the water, and ad the onions and garlic. Cook until onions are soft, about 5 minutes.

Add bell pepers and vegetarian ground beef. Mix in the tomatoes, beans, and their liquid.
Add the corn, and its liquid, chili and cumin.
Simmer over medium heat stirring occasionally, for about 20 minutes.

Super easy, very tasty, and filling!
I added a sliced up pear to complete the meal.
