Jan 24, 2010 – Vegan Mango Quinoa Salad
This is an awesome side dish that is quick and very tasty.
We used red quinoa instead of regular quinoa. I don’t know if that affected the texture or flavor much.
Salad:
1 cup Quinoa
2 cups cold water
1/4 tsp salt
1 ripe mango, peeled and chopped
1/4 cup blanched slivered or sliced almonds
3 tbsp pine nuts
1 medium cucumber , peeled and diced
Dressing:
2 tbsp olive oil
1/4 tsp turmeric
juice from 1 lime
2 tbsp chopped fresh cilantro
Salt and Pepper
Wash the quinoa and boil in water for 10 minutes
Cover and let the quinoa sit until it absorbs all the water.
Fluff the quinoa with a fork and let it cool down to room temperature.
Peel the mango and cut into cubes.
Peel and slice the cucumber thinly and dice the cucumber.
Add cucumber to mango in a large bowl. Add the almonds and pine nuts.
Heat 1 tsp oil in a small pan and fry with turmeric for 30 seconds, then let it cool.
Add the juice of the lime into the bowl with the cucumbers and mango.
Mix in the oil, cilantro, salt and pepper together with a whisk or fork in a separate bowl.
Add the cooled quinoa to the mango and cucumbers then pour the dressing over the cucumbers and mangos.
Toss and serve. You can also chill this for a while if you prefer.
Jan 16 2010 – Tomato, cucumber and Red Onion salad w/ Vegan Chicken Sandwich
This is a very fast to prep but wait an hour and a half to enjoy salad.
I had 2 cucumbers that were sitting in my fridge for about a week and needed to get eaten. I came across this recipe and I am glad I did.
Light and delicious, probably better with some fresh mint.
2 large cucumbers – halved lengthwise seeded and sliced
1/3 cup red wine vinegar
1 tbsp white sugar
1 tsp salt
3 large tomatoes – seeded and cut coarsely chopped
2/3 cup coarsely chopped red onion
3 tbsp olive oil
salt and pepper
In a large bowl, toss together the cucumbers, vinegar, sugar and salt. Let stand at room temperature for an hour stirring occasionally.
Add the tomatoes, onion, and oil to cucumbers and toss to blend. Season with salt and pepper.
Vegan chicken flavored patties w/ vegan cheese made a great sandwich to go with the salad.
Not too fancy, but a great dinner and lots of flavor.
